Our country boasts a rich and internationally recognized food culture. However, we continue to practice some traditional food handling methods that may jeopardize our health. Poultry, for instance, are known carriers of certain bacteria, with Salmonella spp. and Campylobacter being particularly concerning. These bacteria have been linked to gastrointestinal infections, posing a significant public health issue. The food industry employs various strategies to eliminate these pathogens and prevent them from reaching consumers. Despite these efforts, raw meat is not entirely free of these bacteria when it reaches us. In many Mexican households, it is common to wash chicken before cooking, even though it has been proven that this practice does not eliminate bacteria. Instead, it can spread contamination to other utensils or nearby surfaces, necessitating a thorough sanitization process. This article aims to raise awareness about the potential contamination resulting from improper food handling and to offer simple recommendations to avoid it.
