Cholesterol, apart from being part of cell membranes, is a precursor of steroid hormones and bile acids. It is present in the body as "good cholesterol" (HDL) and "bad cholesterol" (LDL). The bad cholesterol is responsible for forming the atherosclerotic layer that is responsible for the development of cardiovascular diseases. A lower value of 200 mg / dL of blood cholesterol is recommended. Mexico ranks first in obesity statistics, in adults and children. The ENSANUT 2012 showed a prevalence of overweight and obesity in Mexico of 71.28%, which can trigger cardiovascular problems. Eggs are a key component of the diet in Mexico, and of its components the yolk has a value of 272 mg of cholesterol. A diet high in cholesterol and fat such as western diet may increase the risk of breast cancer.
